When ordering fajita meat, any one of the following cuts may be included depending on availability.

  • Skirt steak is one of the favorites for fajitas. Broil or grill rare to medium rare for robust flavor.
  • Flank steak is best when marinated and grilled rare to medium-rare.  Slice across the grain.
